I have recently came across a good domain but it has a dot org extension. Where would you say the line is drawn in terms of monetizing the site?

I would like to run adsense and perhaps a few select aff links.

There really are no restrictions, as far as I know. I know plenty of people running commercial sites on the .org TLD.

You can do anything (legal) you want with a .org domain - it doesn't have to be non-commercial.
