Should you lock your domains? What are the pros and cons. Or are they all pros?

No cons, since you can always unlock them again.

No cons, just pros. Just as you should always ensure you're on top of renewals for domains you consider to be of value, domains should always be locked, wherever possible.
Unlocking a domain name in order to allow a genuine transfer request is much, much less hassle than going through the process of trying to recover a domain that was left unlocked and was the victim of a fraudulant transfer request!
