I am on the verge of selling a domain name privately I have read through the threads on this board and I will join escrow for the payment.
My question is, how do my change the details of the domain to the new buyer/owner?
Is it my web host? Or Nominet?

The form and letter are then forwarded to the new registrant who completes their section and also provides a cover letter, before sending everything off to Nominet along with a cheque for £35.25 or thereabouts.

If your current registrar makes you jump through too many hoops, It might be easiest to first transfer the domain to a registrar that allows you to change all contact info, including ownership, from your control panel. I'll sticky you a couple that I know of who do this if you wish.
To me, it's a little scary that it can be that easy, but there it is. The ownership and contact info will show up in whois as the new owner wants to see it.
One consideration to be prepared for, however, is that the new owner won't be able to transfer the name away from your new registrar for 45-60 days after you transfer it to that registrar, meaning you could change the owner contact info again with a simple click in your control panel during that time. If I were the new owner, that would concern me. If he is concerned, the work-around could be for him to set up an account with the same registrar, and transfer the name from your account to his, so he has complete control.
Just in case anyone looks up this thread through the search function, duplicate certificates (including the change of registrant bit) can be requested by mailing certificates@nominet.org.uk.
