Just to clarify - if you are hosted in the USA but the company is trading in the UK which set of laws apply - I assume the UK ones - right?

but then what if someone buys something from say Spain - whose laws then?

Jurisdiction is a tricky subject with ecommerce.

I generally use common sense, and obey the laws of my own country. I have wording such that we collect taxes from Canadian, but taxes outside of Canada is the responsibility of the customer, and that the customer is responsible for the compliance of any
laws in there country or state.

If you don't have any assets that can be seized abroad, I would not worry about it.

Just collect the taxes for the country you belong to, and make sure that you don't ship anything which is illegal to export from your home country.

On the side note, I noticed you are in the UK, so you may have to obey the rules of the EU also.
