Most Versatile Shopping Cart?

I need some suggestions on what most of you feel is the most configurable type of shopping cart. It has to be right off the bat, regardless of price. Who supplies the most dependable and adaptable type of cart on the market.

(I need to be able to refine it in order establish extra fields to capture data)
