Here are some reasons I have seen
- different time of day (work people versus at home people) are clicking
- different time of week (weekend activities prompt different buying habits then week work minded activities)
- different time of month (people get paid at the beginning and in the middle of the month, and have more money)
- different time of the year (seasonal products will find people more interested at certain times of the year)
- something has gone wrong with the website (payment gateway is down, website is slow, website HTML is broken)
- search engine changes (google / yahoo index changes cause people to click more/less)
- competitor landscape has changed (new competitor with similar product and similar marketing has entered the landscape)
- new distribution (new distribution websites have come on board, such as your ads are suddenly being shown on AOL or Content match websites (this usually changes the number of clicks))

Weekends have been good recently, Mondays can be alright as people get back into work and start browsing on lunch.
The recent Google updates devastated one of my sites for a few weeks, but it has come back into their index with Brandy and orders have subsequently picked up.
