From links pointing to interior pages

After a big website redesign with URL structure modifications, where you know that you won't remember all the old URLs that should be redirected to the new versions, and it's possible that there are links out there pointing to the old URLs, do you do anything special to keep the link mojo flowing from these broken links? Do you stick to a simple 404, or do you have any tricks involving 301s and .htacess?

Best practice is to 301 it. Do not 404 it.

Yes, but is there any way to deliver a 301 (eg, redirecting towards a sitemap) instead of a 404 withouth having to enter every old URL in the .htacess?
