No difference whatsoever to me.

Content of them maybe - if the .org really is an organisation with an interest in my topic I might be more interested in alink from them than from a commercial .com who is effectively a competitor.

But then you get into the whole 'qualified buyer vs window shopper' argument.

I'd take either.

.edu's are a completely different story, though.

Care to expand?

And, given the choice between .edu and .gov, which is to be preferred?

Some .edu sites seem pretty volitile, esp. those done by students or related to a particular course or courses.

.edu contain much spam by students, so I do not think so, for .gov I did not check

Can't anybody buy a .org? How do you actually register a .edu didn't see it as an option on the registrars I use.

Anybody can buy a dot org, which is administered by pir.org, though they emphasize the gTLD is intended for use by non-profit organizations. The dot edu is administered by Educause, which currently restricts their registration to accredited postsecondary educational institutions (regardless of global location or for-profit status).
