Basically, a cryogenic pump is used to obtain very high vacuum by cooling down the remaining molecules in a chamber, so they slow down and get trapped on the charcoal surface of the pump.
Lack of molecules moving around, means lack of pressure, which equals high vacuum.

I spent just over a decade doing engineering (controls) for a company that designed and built vacuum (and pressure) furnaces.
Cyro-pumps fun. Simple device, just freeze the air solid in the chamber to make a better vacuum.
