Dinner In The South

No Grill Involved

Read the entire mouthwatering grill post and decided to share a meal that has no grilling involved.

One half of a ham, cooked at 225 for about 16 hours, simmering in whole cloves, brown sugar and Coca Cola.

Collard Greens, simmered in smoked turkey gravy with onions and pepper.

Butter beans with onions, a touch of garlic, smoked ham rind and a dash of salt.

Bacon scalloped potatoes.

To finish it off, southern style, buttermilk cornbread.

What are you guys having for dinner tonight?

I'll be having Chinese food delivered while I continue to work on a site that's way behind schedule.

You, on the other hand, seem to be planning on a coronary for dessert. :)

I'm assuming the entire 1/2 ham doesn't get eaten all at once...

I was going to do a moose roast with potatoes in the crock pot, but I forgot to put it in this morning. Maybe tomorrow.

Last week did a roast leg of lamb, marinated in olive oil and herbs overnight.

Gotta love slow cooked meats.

Ooh... good thng I forgot it today then. I'll have to mix up a garlic-herb marinade to put it in tonight.

Any red meat marinade suggestions?

<burp> Dinner was great. Lately it seems that I do a lot of slow cooking. Beef roast last week cooked for 24 hours at 220, drove the dogs nuts every time I opened the oven and they're outside. Topped of the roast with spuds, carrots and portabellos, all cooked slow.

Next week, seafood pasta primavera made with scallops, black-tip shark, shrimp and lobster claws. :)

Maybe mac & cheese. If I slowcook it for 30 minutes instead of 10 does that count? I might even get daring and add a can of tuna.

Take the tuna out of the can first or you will have to cook it for a very long time... ;)
