Our client is a translation company that wants to accept payment online.
Every customer is going to pay a different amount and there is no product list, as such.
We want to accept prices in USD and JPY but remit to New Zealand dollars (not essential).
Our normal merchant services are not suitable. We were thinking about PayPal, but they don't seem to have much support for Japan (a major client base).
Any suggestions?

you can open merchant account in US along with your checking account and when you get funds in your checking account you can issue checks to your local bank for converting to your local currency and get it deposited in local currency.
USD is convertible in most countries and you can have your account in USD and convert it to your local currency as and when required.

VIRTUAL LINKPOINT
Allows a merchant to manually enter credit card transactions on a PC through a secure connection to the Internet.

Wraps around the Merchants existing website, allowing shoppers to securely pay for purchases with a credit card
