For example, if someone searches for "examples", would you get a little more juice even though that phrase isnt in the true title of the website?
I'm thinking of using a 3-word domain and the combo of the first two words in plural gets twice as many searches as the combo in singular.

You will find somewhat differing results in the SERPs for singular versus plural.
The domain name is 1 of many factors in ranking. I wouldn't waste too much time pondering the issue and would spend that time working on other more significant ranking or traffic issues.
