i registered a domain which i thought i was registering private, but i guess i forgot to select the privacy button when i ordered it, so then i had to go back and add the privacy after i had registered the domain, but my personal info is still being displayed in who is. will they update this and erase my personal info once they realise my domain is now private or do they have a right to display my info because at the time my domain wasn't private or do they legally have to abide by the now updated privacy and remove my info? to this day my info is still showing? if anyone has any answers i would appreciate it.

How long has passed? Sometimes the update isn't instantaneous. There are a couple of things going on at the that have resulted in privacy has been removed/revoked from swathes of domains but it only affects a few registrars.

And no you don't have to have Privacy throughout the whole period of registration, you should be able to switch from and to as you wish.

One thing to remember is the name in the WHOIS is the owner of the domain. So if you use a privacy service they own the domain and you have a contract with them to say they will give you the name back when you want it.
