DNS Servers point towards new site.

Will i disrupt service?

My company currently has a co-located Mac Mini server in South Carolina that hosts our website and a mail server.

We are going with a different hosting company this week. The site is established and ready to go. We are registered with GoDaddy.com.

If i call GoDaddy to have them point DNS towards our new server for the web site, can i still keep my mail server in South Carolina to get our mail?

Yes you can, but it is pretty tricky to do. You will have to have a mx record pointing back at your old IP. This will require someone with good dns tech skills to mastermind it on both the new and old host.
