How can I setup a Backup Nameserver

I have a simple, single domain set up on a dedicated server. I've been with the hosting Company for over a year and the price is right, though service could be better.

Over the last year their nameserver(s) has gone down several times. Access to the nameserver for managing my domain and any sub-domains is very poor indeed.

I tried using PowerDNS, Sitelutions and Zonedit, adding their nameservers to my DirectNIC listing. Something wasn't right and Europeans could not get to the site so I dumped all of these.

I would like to have a nameserver which I can control; one that is more reliable than the one provided by my host, or at least another which would work as a backup nameserver should the hosts nameserver(s) go down yet again.

Thoughts? Ideas? Anyone know how to do this without killing access to my site for europeans?

DynDNS is one. It's about $25/year per domain, and you get 3 DNS servers. I'm told that they are very reliable.
