a few questions about sql and phpmyadmin

Looking through phpmyadmin and what i can do with a database. Theres a few questions i have to ask about it.

Collation - what is it for? And which one should i choose? After a quick google search its something to do with character type, accents and the like..or something..

Move table to (database.table):
What is this for? and what does the Add AUTO_INCREMENT value tick box do? I'm looking for ways of displaying the database contents in a particular order, namely the order they were put in with the most recent displaying first. and auto incrememt id coloumn is one way i've found out, but no way of creating it yet.

I presume the copy table is copying it to a new one. And you type in the new name? And with some extra options like auto increment and structure only etc..
