Liability for Copyright Content in Embedded Youtube
If someone else's Youtube video is embedded on my site

Youtube isn't exactly a bastion of copyright compliance, and apart from the direct ripoffs, there are many videos which are clearly derivative works in copyright terms, and for which I sincerly doubt permission was granted.
That being said... ...what is my legal liability if I embed a Youtube player on my website, and it shows a video which later is found to be a copyright infringement in some way.

Two wrongs, as they say, never made a right.
If you embed, then you publish. Theoretically, at least, you are responsible for making that choice.
In practice, I suspect most copyright theft victims would go after youtube, unlesss you do it wholesale.

You are liable and on the hook.
If the copyright is not registered you are liable for actual damages.
If the copyright is registered then you are on the hook for Statutory civil damages AND criminal penalties
