If a visitor comes from MY website, clicks on my tinyurl link, and visits the website my tinyurl link is pointing to...does that website pickup the IP address of MY site OR tinyurl.com Or both?

If the browser sends referrer headers most will send the URL of your site AFAIK. It's a standard redirect, and to the best of my knowledge browsers usually set the referrer as the site the link was clicked on, not any redirects along the way.

what is the point of tinyurl?
i thought it was for use on things like twitter not websites?
... personally i never knowingly click on one - why would i click on a link and not know where it's going to send me
