At the moment I am getting flooded with requests for quotes and I am finding I am spending more time building quotes (in MS Word) than actually doing any design.
Can any of the wise people of WebmasterWorld suggest some software that would make this process easier?

You might want to check out some of the invoicing software out there. There are lots available. Try a search on Google. I use a simple piece of software called Instant Invoice, which lets me do quotes and e-mail them in PDF format. I chose this because of its simple and easy to use interface. Everyone has their own preferences depending on what they are looking for.
