The cost issue! (What do I charge my customers)

I just started a new business <snip>

I am running into the ever growing problem - what do I charge for my services.

I DO know I do not want to charge by the hour. I feel rushed in that case and can't take my time to play around with stuff.

Should I charge by the page? And then charge for content? I would love to see some of you all's price breakdowns. I know I'm charging too little for sites now and I have not once had to advertise. My work spoke for itself and I have people beating my door down for work. So I guess I can say that I can start being selective on who I take on.

Also - I have about 13 sites running right now (plus updating). I am nearly about to pull my hair out...should I hire someone else on to help me with the work load? Or should I just contract sections of the site out to people?

I have done by quota of free work to build my portfolio. Now I am working on projects and just got a few projects that paid out - $500, $600, and $1,500 respectively.

Any advice? And if I did "hire" someone or "contract" someone what is the method of paying them?! HELP!
