I need to bulk up my portfolio, most of the sites I have developed over the last few years have been very similar, principally e-brochures for SME's and online magazines for organisations and charities.
I'm thinking of designing dummy sites, but i'm not sure how diverse the subject of the sites should be, also thinking of re-designing sites of companies in my local area, would I need permisson to do this?

If you are really going to go to the trouble a site to flesh out your portfolio - I would definitely make some websites that promoted some affiliate programs - at least that way you have a chance at monetizing your time and effort in addition to showing off your design / positioning skills.
