If I have a site called site1.com but it is hosted (forwarded) on a domain called site2.com, will Google crawl site1.com when I list it with them? Do I need to do anything special or will it be handled as any other URL? Thank you for any assistance.

They should crawl anything that is linked to by a page that is already in their index.
Yes, it will follow both 301 and 302 redirects.
Unfortunately, 302's seem to be the most used in forwarding services.
