does anyone know how to have word 2007 and excel 2007 open automatically to full window?

Do you mean maximized or full-screen (e.g. F11 in Internet Explorer)?

If you simply mean "maximized" then right-click a shortcut and open/edit its properties.

If you actually want full-screen, there may be an option to do this but not a generic method.
