My webhost uses SqWebMail, a CGI based app, which seems to work ok, though it also could use more than it's share of interface work. I don't know much about administering it though.
AspNetPop3 is a very cool little webmail front-end to an existing POP3 server, if you have the .Net framework on your server. It's very inexpensive, and has a nice default interface, though currently it's not as feature-rich as some of the other options.

Quite easy to setup and its free. Download PHP, download Squirrelmail, download Mercury, set it up once and you're up and running in no time.
You'll need to enable IMAP on your mail server though, that is how Squirrel Mail will interact with the mail server.
