I would like to create several websites eventually and put google adsense ads on them.
I guess I will need to purchase a seperate domain name for each of them.
Do typical web host subscriptions (for example a shared one) have a restriction on the number of sites and therefore domain names that you can have?

If you can't find a shared hosting that allows multiple domains, I suggest you look for a reseller account or a VPS (Virtual Private Server) that allows unlimited domains to be hosted with your hosting account.
In my opinion, VPS is definitely better and economical than signing up for a few shared hosting accounts to host your domains.
If you have no idea what is VPS, let me just cut it short by saying that "VPS is poor man's dedicated server."

You can have all those sites hosted in one domain and create a subdomain for each topic. E.g. your domain is domain.com
You can create 3 subdomains:
music.domain.com
movies.domain.com
cars.domain.com
All depend on your budget. If you are willing to purchase extra domains then do it. If not, just stick to one domain.
If you only want to pay for the hosting of ONE domain account, and your using a serv er side language, you can point all of your DNS servers to that ONE account (IP) and then programmaticaly load the proper site according to the domain name. It is fast, seo safe, easy to implement and works great when you are as cheap as me.
Most hosts offer deluxe shared plans that allow multiple domains (3, 5, 7, 10, etc., depending on the plan).
Of course, most hosts offering dedicated servers let you put as many domains as you want on the box, though it's more expensive than a shared plan.
