Will all my past statistical data be transferred to my new server / host to be accessed within my new platform interface? Or is my traffic data linked somewhere aside the domain name itself...

If you're switching to a completely different hosting provider, it's highly unlikely your stats will be transferred, as every provider has their own solutions.
You'll need to ask your existing provider to give you the logfiles for your site and / or any generated statistics if you want to retain them.
