How can I monitor what files are being accessed?

I have a Linux webserver running Apache. I can use the iftop program to monitor bandwidth usage on the server, but it is not specific enough to show what is being served.

This is important for me as monitoring what files are being accessed can alert me to file leeching. I know that I could just disable the ability to leech altogether, but it is only really a problem in large amounts.
