Please let me know how the big e-commerce sites like Amazon, Flipkart, etc. create meta tags for its each and every product page.

They probably use automation for title tags for products and categories and probably have the ability to overwrite the automatically created title and meta description with hand crafted wording. They would then decide which categories/products should be updated with hand-crafted title/meta description.
