I received these emails that contain character I'm not quite familiar with:

The following mail can't be sent to tips@###.com:

From: [e-mail]
To: tips@###.com
Subject: Look for an additional
The file is the original mail

The interesting part is the above that says from [e-mail] sends an email to tips@###.com

Hmm....I have never sent anything to that address.
Could someone try using my server to spam?

Those two headers (as most others) are easily faked. The software of the sender can enter anything they like there. In this case, they probably tried to circumvent some naive spam filters, by making it look like you sent it yourself.
