As for Chinese websites: Not being an experct in the matter myself, I am afraid that there are indeed one or two websites out there that deal with Chinese history, language and/or customs - however, these days you won't find any wide area that doesn't have websites that would already cover it. Don't worry too much about your competitors - study them and then be better! Happy webbing!
I would say that you have probably already missed an excellent window of opportunity. Because of the Olympics, there has been a huge increase of people looking for the types of sites you mentioned, but the amount of interest will probably decrease back to normal within the next month or so.
Yet that can also be a good thing- many people probably built their sites to take advantage of the Olympics and will fail to maintain them after the Games are over. And there will always be an interest in China.
So as was previously advised, take a look at what is already out there and figure out how you can do things better. And figure out your own specific interests and stengths- focus on those. I would focus on one site to start and build that up well. If you try to do several sites at once, you'll usually spread yourself too thin and not do any of them well.

I'd try to come up with a domain name that relates to your topic. Don't just use a random word, use a word that relates to something chinese or relates to having chinese information.
I personally enjoyed HostMonster in the past. As long as you stay below 50,000 unique visitors a day it's cheap and they have good customer service.
Google Adsense is your best option...there are other ad companies you might want but you'll need an established site to be approved.
