i am thinking of doing one of these as part time business..

both.
build site during the day when you have power.
sell on ebay at noght when you are tired.

i guess i am trying to ask which might have a better potential that could lead to a full time business and get away from the rat race.

Yeah, that's the kind of question we all understand.
We all want to escape the rat race and many forum members have done so. So read and learn and think long term, it's not gonna happen overnight. Remember the best potential is there where you want it to be. If you are going to do things you don't like, it feels like being back in the rat race right from the start. As a beginner I would just start off making a website about things I like and join the Adsense program. I did it 1,5 years ago and I don't have regrets.

ebay or website?

I think having a website offers the most potential, but ebay has some advantages...

built in traffic
easier to match your supply to demand (possibly)
easy to compare your competition

I do/did them both.

Use the website as a way of establishing you as an expert in your field. Example if you are going to sell blue widges start a blue widget blog and use the same username as your blog on Ebay.

Selling on Ebay and other auction sites is the best thing I ever done for my business. The core advantage with Ebay is that you can attract a number of regular customers. Some say that all Ebay customers are looking at is price, and with some products that is the case. But if you have rare or special products you will be surprised in how loyal some customers can get.

If you regard Ebay as a transit to your own ECommerce site it's easy to ge those loyal customers over to your ECommerce site. So Ebay is a good place to start together with other activites.
