Could someone tell me want the diffences is in A visit verses a Hit when checking stats in control panel.. I know it is pretty simple but it seems like there are a whole lot more "Hits" than "visitors"

hit = server petition.

If you had a website that had 9 images, plus the page - that would be 10 hits.

If a person went to that page, and then a second page with another 9 images - you would record 1 visit and 20 hits.

As Patrick pointed out, you can see where 'hits' are virtually useless as far as analysis purposes, since it can fluctuate wildly depending on the design of the page.

I don't know what you are using for log analysis, but much more important than 'hits' are 'unique' visits, and 'impressions' (the number of pages each person looks at).

If you have a 50-page information site with AdWords, for example, and your unique visits per day are 500 and your impressions are 600, then only 1-in-5 are bothering to click to another page of your site.

In such a case, you want to create a more compelling message in your links to attract visitors to many more pages per visit.
