If I want to have every Macromedia app open and switch between them, I would want the max amount of RAM my laptop can accept. However, if all I ever have open is BBEdit and iTunes, I wouldn't see the point in upgrading RAM -- 128 is sufficient.
If you open Activity Monitor and switch to the "System Memory" tab at the bottom, you can look at the "Page ins/outs" numbers to determine how much of your RAM you are utilizing. If you have a lot of page outs you would probably benefit from more RAM. :)
