Will that change anything? Or setting it to port 2525 does not change anything as far as my email receiving and management usual functions?
Be kind :) I am not yet a MAC user!, but plan to help my partner that is not sure about it.
I am working on having him joining WebmasterWorld.
thank you

I don't think it changes anything on your end. What it does do is assist your provider in keeping Port 25 closed off to the public. My understanding is that this is a method to help minimize email spam.
I just got notice a few months ago that we were changing all SMTP to utilize Port 2525 instead of Port 25. I really can't tell if it works because our Barracuda firewalls do a heck of job on filtering spam. My server admins are just following my instructions to make sure we have everything locked down tightly. ;)
P.S. Do a search in Google for...

The most likely problem you may run into would be firewall related -- you may have to specifically allow communication on port 2525. Accessing from certain private networks (e.g., corporations) may pose problems if they block communication on that port.
He receives mails from my server but cannot reply
I investigated and my server admin says that I should install "alternate 1.0" in order to allow for that 2525 which I did
so the next step is to find how to change the default 25 to 2525
I will first look at his email client port setting
and G for the "email..traveling"
