Hi,
We are having to move to a larger host (Rackspace - a good problem to have :)) and I want to host us on a FreeBSD box but there is also a Redhat 7.2 or 7.3 box available too. My thoughts are to go with the FreeBSD box for uptime and stability from what I know or have heard but thought someone might be able to give a better view.

Thanks....

Yeah, most of the large providers don't offer FreeBSD.
I got one of my boxes at servforce, check them out.
They are not perfect, but at least you can get them to do what you want (the beauty of dealing with small companies).

If you can buy a box (finance from dell for example), then check out co-location option at johncompanies. This guy is really good with FreeBSD, so he'll be able to help you out.
His connection is also really good, I got 5Mbps upload speed with no problems. But his response time for e-mails is really bad.

As far as linux vs. freebsd - I never had a crash on any of my boxes or my clients' production boxes that run freebsd. Ever!

I did manage to take down a development box while running an older version of tomcat and using up all available file handles. But the box got back up in about 20 minues (after some processes died off).
