Evolution usually stores emails in the standard mbox format. I don't use Outlook, but virtually all email programs can import mbox files.
The big disadvantage of Outlook is that it uses a proprietary, binary .pst format for storing email, so it is difficult to switch away and makes you dependent on MS software. Do you really need Outlook? If not, try Thunderbird - it is available for both Windows and Linux, and uses the same mbox format as Evolution.
