If you want a GUI look at www.4d.com but it costs money. If free is more important try exim (www.exim.org).
You could also try Mac OS X Server which has a great GUI for Postix, but again it costs money.
As for the GNU compiler, just install Apple's Developer Tools and that'll install GCC for you.

to set up a mail account you have to set up a system user and enable mail for that system user. but wait, theres more. because no two system usres can have the same name, no two email address being hosted on the server can have the same name, even across domains.
the following example is impossible...
johndoe@domain1.com
johndoe@domain2.com
yep, thats right, i'm not kidding
you can't have two emails with the same name, even thought the domain is different. so what happens when you are hosting two web sites and both clients want support@theirsite.com? you can't do it. once one client uses support@anything.com, no other client can make their email start with support.

i wish i'd just spent my money on osx client and EIMS. i would have spent less money and got something that actually works.!
