I have found 5 related sites with PR 7 & 8, which I am corresponding with to get linked. My site is PR 0 as it is a new site.
- What would my PR be if I get linked to all 5 of them?
- Would search engines include me cos of those links?

PR is by page, not by "site". Their home page might be PR 7 or 8, but what matters here is the PR of the page your link is on.
That said, get those links if you can, but expect Google to be slow to take your site seriously until you have links from a broader base of trusted places.

There are many factors to increase PR like age of website, age of links, content of website, no of links so it’s very difficult to exact answer
