need help with ppc conversions

I've been using Google adwords for around 7 years but in the last few months I've been putting a lot of time into narrowing down the keywords into ad groups / campaigns.

Adwords is reporting that on one keyword I spend 175 per day and get around 175 clicks. The conversion cost should ideally be around 40 but it's around 200 which suggests it's not working.

I'm bidding on one keyword which exact match with the lowest bid amount to get in the top 3 and over 100 clicks a day.

The keyword is the most important one to my industry/business etc.

The quality score/site content etc is all good for the keyword.

Google says I can spend upto 1000 per day on that keyword.

My competitors all bid on the same keyword and are spending a lot more per day than I am.

I signed up to a click tracking service to double track the conversions and after a month of testing the google conversion tracking is right. I'm getting hardly any conversions.

When I stop running the adverts my sales drop.

When I start running the adverts my sales increase.

I'm not sure what I should do? I can imagine some people order on another PC and can't be tracked but so many? If the conversion tracking is showing awful results what would you suggest I do?

Andy31 this question is one that is really hard to form an answer, but from the quoted area it seems the ads are converting.
1- You say I stop running the adverts is this all of them or the specific one word term you said was the money term (or you think is the money term)?
2- Are you just bidding on 1 term one keyword?

Are you selling products? If so are you using product listing ads?

I've narrowed each keyword down into it's own ad group. When I stop the ads it's the money keyword which has the bad conversion rate and crazy spend. Exact match.

I am selling products. I'm not using product listing ads this is just normal adwords text based ad.

You didn't answer my question very well.
1- So you have a group of keywords I assume landing on the product url for this group correct?
2- When you stop the (1) one group containing the exact match sales go down?
3-OR do you stop them all?
4- Trying to figure out if your stopping them all or just the exact match single term.
