Ive taken over an AdWords campaign and the vast majority of my quality scores are 7/10. I have a few 9 and 10s and the odd 6. I can't seem to improve on this 7/10. Has anyone got any advice/tips or have the same scores?

Time. :) As far as I know, the software reconsiders and recalculates quality score around every 1000 impressions or so. (And it takes really good performance to get a keyword up above a 7 or an 8.)
Honestly, most of my keywords sit at 7 most of the time. A 10, which I used to find reasonably easy to attain, is becoming increasingly rare.
