does anybody know, whether it is allowed to add an additional symbol in front of an ad sitelink?
I can't find anything in the google adwords guidelines.
(For example: a plane symbol followed by the actual sitelink)

No, and Google have developed an automated sitelink checker tool for symbols which they are releasing any time now.
So if you do have symbols in your sitelinks, best get them off quick or run the risk of having your sitelinks banned.

Further questions concerning google sitelinks:
Does anybody know, wheter the available data (in the statistics of the ad extension) is measured more than ones? That means, is the sitelink data also included in the keyword statistics (CTR, Impressions...)?
Is there a way to see conversion data for the ads with sitelinks? Or is this conversion data part of the statistics of the keywords?

I haven't seen conversion data; I am putting in my own tracking urls so it'll show up in Analytics.
