I have been looking at the ads for search terms that I am about to add however I have found ads from larger competition that have bold titles. How have they done that?

Bold Title is a result of dynamic keywords inserted in the ad title. Every time a keyword or term is searched, this keyword or term is shown in title with bold letters.

If the keyword the person searches for is in your title, it will turn up bold, dynamic keyword insertion is one way to do it but it works if you just write a regular ad with the keyword in the title.
