Hi Elliott Knapp - I'm not entirely sure I've understood your question. Are you looking for a course on the sole subject of writing excellent AdWords ad copy - or a course on the more general topic of advertising successfully with AdWords?
If it is the former, you might want to begin with this basic information from the AdWords Learning Center (this link goes to a lesson formatted in text, but it is also available as a multimedia lesson):

If it is a more general course you're after, here is a link to the complete lesson catalog for the AdWords Learning Center, which, in my opinion at least, is an under-utilized resource. It's a good place to start learning, and has the added advantage being free:
