All AdSense deleted in May but still income

about 40% of revenues

I decided that promoting my own company is more important than AdSense revenues.
Special since the “You have to accept cookies” pop up is annoying.
So I deleted all AdSense code in May.

But there are still revenues, about 40% of before.

Did you remove "all" the code? Auto-ads (vignettes/anchors/other) require ad-code to added to the header of the page. Search ads? Check your Adsense reports to see what is generating the revenue.

I removed all the code. Before posting, I checked again my sites for cookies. Not a single cookie was reported.

Check your Adsense report to see where the revenue is coming from. Check each tab in the reports, the revenue should show up somewhere and that will provide you with at least a hint as to what is causing this.

Maybe the site is still cached in various places so ads are technically still running for the interim.
