Would I be better off creating our own YT channel and then eventually monetizing it through adsense?

If your videos get interaction you can do well creating a YT channel. There is a LOT of competition so research your topic before starting the effort. It can be a long, slow start before it becomes rewarding.
You will need to create a good following on YT before you can reap rewards. Your videos will have ads on them from the start, that does not pay you until you have a good channel following.
