Any sexual content on a website gets flagged by google adsense with a warning to remove, whether that be images, sometimes quite tame, or text, but on youtube, they seem to get away with a lot more, pewdepie is a classic example. What is the difference?

I'm not familiar with the account you mention, however you can age-restrict Youtube videos and thus require users to be 18+.

I think the problem with Adsense's sensitive content warnings is that they're auto-generated from user complaints. I copped a warning once for an image of a young woman in a tight t-shirt. It was ludicrous. I can only assume that some wowser or wowsers took exception and fired off a complaint.

But they still carry adsense ads, age restricted or not, also if it's an option for youtube, why not make that option available to websites, I am not talking #*$! sites, just normal sites that want adults to be able to discuss subjects like adults. I have a forum and I am constantly deleting or rephrasing words from my users that may flag up a google bot.

Not only that. Adsense will ping websites for the content in a youtube video. And the youtube video will remain up with adsense ads.
