Adsense will look at the content of each page you place the code on, and try to target the most relevant ads for that individual page - not the site theme.

For example, my website is a fairly serious site, so I lighten the tone with jokey or amusing pages that aren't totally related to the topic. When I tried Adsense on those pages, the ads that were targetted were relevant to the page, but not relevant to the overall site content. I removed the code from those pages, as the clicks/earnings were miniscule, and monetised in other ways instead.

I liked seeing the different ads personally, but visitors didn't click on 'em. However, everbody's experience is different, so I suggest you put the code on a few pages and see what happens.
