My website is constantly decreasing

For few weeks ago my website is constantly decreasing in search position. I lost keywords and is gooooing down.
Although it is well rated on several on page and off page seo verification software that I have tried.
I checked Google search console and Analytics and found no major problems. However… from one day to another it keeps going down.
I also checked what the main competitors are doing and they are not doing well, at all.
The main competitor actually has a creepy website. Totally devoid of onpage or offpage SEO but with an enormous number of backlinks. And of a very bad quality, which should disqualify it, still…
Few weeks ago I changed something.
In the pages I had H1, 4xH2, no H3 and an H4 without content.
An unnatural H tag structure.
Now I have H1, H2, H3, 3xH4, with the coherent information.
Theoretically, Google should have been “happy” or I’m missing something.

I use a SAAS platform.
I just found out that they made changes to the keywords (tags).
I am selling toner cartridges for printers.
So…
The tags are printer models and generate a url in which they have the products.
<snip>
The question is… should I make tag canonical?
Is it possible for products to loose so much in Google search?

SEO isn't as effective now as it used to be. The quality and usefulness of a site's content is much more important to Google.

It can also help to have some unique information that competing sites don't have.

If the tags are generating too many similar or low quality pages, it is better to noindex them.

Are you using the h1 (etc) tags as semantic or formatting purposes? Can make a difference to g.

Is it still necessary to optimize the title+description of the page?

Or can we just focus on optimizing the content of the website?

1/ Are all pages going down or just a few of them?
2/ Are you losing all keywords rankings or just a couple of them per page?
3/ You mentioned you're an E-commerce - are you losing your ranks to big players like Amazon etc or local competitors?
4/ When did the traffic start declining - was it right after an update or just random?
5/ Have you checked Google Trends to see if people are losing interest in your keywords or if the trends are moving?

Traffic decline can be due to 1000s of factors, you gotta dig deeper and find out for yourself. Each site is unique.

Except Google can't figure out what content is useful or not.

You are selling products which means thin content. Not much you can do unless you add a blog and write about toners - if possible.

It seems that I still get to the content...
The hard question is how to solve it.
For my products, as said, it is difficult to create quality content.

You have to interlink your articles with the product links. Google otherwise wants you to spend money especially for ecommerce.
