I'd like to update my domain name registration info but I don't want Google to see that as a change of ownership and jeopardize my rankings. Would it definitely be OK to update the info or am I safer leaving it along?

If you don't make major changes to the website at the same time, changing the owner's name is almost never a problem. But if it looks like there's a complete makeover, then you often get trouble.
I've been involved in several sales of businesses where the new owner just maintained the website as is, but their name got entered into the Whois. Not a blip on the Google radar.

to be extra safe you should only change one of these at a time:
1)domain registration info 2)hosting info 3)site layout/content
you can make multiple changes and be fine but to be extra safe i would only change one of those three at any single time. in my experience changing all three at the same time leads to some level of trouble.
