Rewriting subdomains to directories

I recalled about two years ago, I had a hosting company that allowed me to create subdomains simply by creating a new directory. So:

http://www.domain.com/index.html

is taken from:
~/www/index.html

http://sub.one.domain.com/index.html

is taken from:
~/www/subdomains/sub.one/index.html

http://sub.two.domain.com/dir/a.html

is taken from:
~/www/subdomains/sub.two/dir/a.html

and so on. I'm setting up a server on campus and I was wondering how I could create this effect without (I'm assuming) altering any DNS entries, or maybe I do need to setup initial DNS entries? Any thoughts appreciated.
